Dragon Tongue Beans with Cherry Tomatoes and Olives
1/2lb Dragon Tongue Beans
10ea Castelvetrano Olives
2Tbls Roasted Almonds
1cup Mixed Cherry Tomatoes
1ea Fresh Cayenne
1ea Lemon Wedge
2Tbls Olive Oil
This is the end of the summer dish that is highlighting the last of the CSA summer veg and is an easy side dish for any dinner!
Lets get started by cleaning the beans and getting the stem off the top. Take the Castelvetrano olives and cut the meat from the pit and set aside. Now take the Cayenne and slice it thin and set aside. Take the almonds and rough chop them and set aside.
Now get a pan hot and blister your cherry tomatoes should take about 4 minutes. Remove them to a bowl and season with salt pepper and oil and set aside.
In the same pan on medium high heat add a tbls of oil and add the bean to the pan season with salt and pepper and sear on one side for 4 min, stir and let them cook for 3 more min. when cooked to your liking remove to a bowl and season with lemon salt and pepper to taste.
Now plate up by starting the beans and tomatoes then the olives and cayenne and finally the almonds. Now eat and enjoy!
