Spelt Fusilli pasta with yellow string beans and mixed cherry tomatoes
Ingredients

1lb Sfoglini Spelt fusilli
1pt Mixed cherry tomatoes
½ lb Yellow string beans
1ea Jalapeno seeded
2 Cloves garlic
1 bunch basil
1tbls Ginger vinegar
2tbls Unsalted butter
½ cup finely grated Royer mountain cheese or parm style cheese
This is a take on fresh tomato pasta using our delicious mixed cherry tomatoes, yellow string beans and a little jalapeno for spice!
Start by putting on a pot of water for the pasta, salt it and let it rip.
Next get all your veggies out. We will clean the green beans by removing the stem. Get them all lined up and cut into 1-inch pieces, set aside. Now take your jalapeno and cut in half remove the seeds and rib. Then cut into thin slices, set side, now cut the cherry tomatoes in half. Clean the garlic and slice thin. Pick down as much basil as you see fit, I like a lot but do you!
Before you drop pasta get a large sauté pan on medium heat. Now drop the pasta and set a timer for 6 min…about how long this should take to cook! Add olive oil or any oil you see fit to the pan then add the garlic and let it go till it starts to get translucent, now add the tomatoes and jalapeno, let soften for about 2 min then add the beans, grab a ladle of pasta water from the pot about 2 ounces, add it to the sauté pan along with the vinegar and turn to low heat. Now your pasta should be about done. Drain and add it to the sauté pan and toss in the sauce, now add the cheese and the butter and toss till coated and butter is fully emulsified.
Finally tear in some of the basil leaves and toss once more. You are now ready to plate. Top with plenty of fresh grated cheese and more basil!!! That’s a wrap eat up and enjoy!
