Korean-Inspired Banchan

This recipe comes to us from CSA member Ivy Paraggua. We got hooked after she brought us some and we've made it many times since. By the way, you should all feel free to feed us or give us recipes anytime! ;)

This is a nice, light lunch especially when served alongside white rice.

Ingredients from your share/swap:

3-4 cups spiralized or julienned broccoli stems, or zucchini, squash, radish, cucumber, etc.

1 tablespoon honey

1 chopped scallion

Ingredients from the grocery store:

1 tsp apple cider vinegar

1 tsp korean (or any kind really) chili powder

1 tbsp sesame seed

1 tbsp sesame oil

1 tsp sea salt

Special Equipment:

Spiralizer: this should be mandatory equipment for all CSA members but you can achieve a similar effect by julienning (with a lot more work). You can buy one on amazon.

Combine all ingredients and allow to sit for 20 minutes. No cooking necessary.
